Preheat the oven to 400° F. Lightly grease your muffin pan and keep aside.
In a large bowl, mix the Twin Peaks Protein Pancake Mix, butter and milk/water gently until just combined and let it rest. We want our pancake batter to be slightly thicker than usual for this recipe.
Spoon in the pancake batter evenly between 6 muffin cavities. With damp hands gently press the batter and move some up the sides.
Spoon in ½ tablespoon of pizza sauce onto the bottom of each pizza and top it with onion and capsicum. You can use any pizza toppings of your choice. Top them with ½ tablespoon of shredded mozzarella cheese. The pizza cups are ready for the oven.
Bake for 18 to 20 minutes, until the pizzas are lightly browned.
Remove from the oven. Let the pizza cups to rest for 5-6 minutes. Carefully remove from the pan and serve with a sprinkle of freshly chopped basil or parsley.
