In a large bowl, mix the Twin Peaks Protein Pancake Mix, butter and milk/water gently until just combined and let it rest for 2 min.
Pour about ¼ cup of the batter per pancake on a low heat flat non-stick pan until the edges start to look dry. Flip and cook on the other side until golden brown. Repeat for all the pancakes.
Clean the pan and place on medium high heat. Add butter. Once butter is melted, crack the eggs directly into pan. Cook until the yolk is cooked to your liking.
Now plate the pancakes and add ham and sliced avocado over bottom pancakes. Top it with the fried egg and season with salt & pepper. Place the second pancake over the egg. Drizzle some maple syrup for some sweetness.
