MIX – Preheat the oven to 350F. In a large mixing bowl combine banana, peanut butter, oil, honey and milk to form a smooth consistency. Now, add the Twin Peaks Protein Pancake Mix, rolled oats and cinnamon to the wet mix and mix to form a thick cookie dough. Now add the chocolate chips and mix again.
BAKE – Line your baking tray with parchment paper and evenly space the dough balls on the tray. Leave enough space between the dough balls as they will expand while baking. You can top them up with some additional chocolate chips if you like. Bake for 12 to 14 min until edges are golden brown.
TIP – It always nice to refrigerate your dough for 20 to 30 min before baking. Its will let the flour hydrate and fats solidify making the dough firmer. This step will give you beautiful crumblier cookies.
