Pumpkin Spice Pancakes

 1 cup Twin Peaks Classic Protein Pancake Mix
  cup Steamed and pureed Pumpkin
 ¾ cup Milk of choice
 1 tbsp Melted butter or any unflavoured oil
 ¼ tsp Cinnamon powder
 ¼ tsp Ginger powder

MIX – Gently whisk all the ingredients together in a mixing bowl until just combined. Let the batter rest for 2 min.

MAKE – Pour about ¼ cup of the batter per pancake on a low heat flat non-stick pan until the edges start to look dry. Flip and cook on the other side until golden brown.

SERVE - Serve with a dollop of Greek yogurt, almond slivers and honey.
