MIX – Gently whisk all the ingredients together in a mixing bowl until just combined. Don’t over mix as that will cause the fizz to escape. Let the batter rest for 2 min.
MAKE – Pour about ¼ cup of the batter per pancake on a low heat flat non-stick pan until the edges start to look dry. Flip and cook on the other side until golden brown.
SERVE - Serve with a dollop of Greek yogurt, blueberries and maple syrup.
